STEAMING AND BOILING DOWN ESTABLISHMENTS
TO BOIL OR STEAM DOWN OXEN EITHE [EITHER] FOR THE PROPRIOTOR [PROPRIETOR] OR OTHERS
The proprietor of a Steaming or boiling down establishment, will require to have Sixty Bullocks Slaughtered daily, and to have vats to Contain this number in order to remunerate him for his expenses & outlay - This Calculation is made upon the operation of the generality of works of this description at the present time 1847.
During this & previous years works of this description were in operation three months out of the twelve.
Calculate thus say 60 head of Cattle boiled or Steamed down at 8/- per head £24 - 0 - 0 one third allowed for tear & wear & for wages.
Leaving a balance in favor [favour] of the Establishment for interest on buildings, Boiler, Tests [?] etc.etc. when the establishment is in full operation all the year round a different Calculation will require to be made.
SALTING HIDES FOR THE ENGLISH MARKET
The hides when taken off the Carcass are washed Clean & Stretched upon a fence to drain the water off the hide - they are then taken to the Salting house spread out & Salted. In this first salt they remain three days, they are then turned over & resalted, in four days they are again salted in this last salting they remain ten days when they are fit for rolling up & tide for the London Market.
With Care ten pounds of salt is quite sufficient for each hide -
THE HORNS OF THE CATTLE
The horns of the Cattle also find a market they are purchased & shipped in Sydney for the English Markets, they are found to be of service on board ship by being placed between the layers of the hides -
NEAT & FOOTS OIL OBTAINED BY BOILING THE FEET
Considerable quantities of Neat foot oil is obtained at the Boiling down Establishments which is used for a variety of purpose.
