March 15th Worked over at bung considerably during night and until about noon after which apparently subsided a little at 5 P.M. temp 90o

March 16th 8 a.m. fermentation subsiding scam nearly absorbed temp 90o - cask nearly filled up from No 11

March 17th Working much more gently filled up from Puncheon No 9

March 18th  working too quietly sp. grav 1022½ : 80o

March 20th           Do                        "      1012½ : 78 has lost so much that it may work down.

March 14th  -  Cabernet & Malbec. Not at all damaged - Put up three londs about 300 gals @ 1088o - put to work in open cask with skins confined by false head added at once 15 gals New B. @ 14 O.P.

March 15th Working strongly all day

March 16th Do but less violent temp 92o at 5 P.M. sweetness fast disappearing

March 17th working much more gently added 27lbs  fine pieces

March 18th working very gently

March 19th added 27lbs fine pieces (total 54lbs) 

March 20th working very gently not perceptively sweet.
