finished filing cask on Sat 4th March - working strongly in afternoon added 20 gals of Madeira Brandy -

Sunday 5th temp 88º sp grav. 1052º  working strongly added 5 gals Madeira Brandy (making 25 gals) - at 6 P.M. temp 92º sp grav 1035º added 6 gals brandy total 31 gals.

March 6th - at 7 a.m. 1027º - fermentation subsiding -

March 7th at 8 a.m. sp grav. 1016º - at 2 P.M. sp grav. 1014º temp 86º racked off into two pipes two Hogshead & quarter casks (not quite full)

March 9th Used one Hogshead to fill up No2 large cask of G.M. in cellar

March 11th Have effervesced briskly at bung since racking sp grav.   No 1       No 2
