20th March - 7 A.M. Working strongly and running out at bung - put in tube with hose in water. Cask burst a hoo[ about 10 - owing to too much prepare upon the end of hose - wine very warm -

21st  7 A.M.  Formentation more gentle - wine still sweet but very warm temp 102o added LS. 27 oz

22nd 7 A.M. Wine cooler, fermentation gentle LS. 22 - Filled up cask

20th March  P.M. began to work strongly and not to violently as No 1 put in tube & hose

21st  Fermenting friskily all day with hose in water at 8 P.M. added LS. 332

22nd 7 A.M. Gentle fermentation but wine very warm temp 100o added 88
