This sort commenced formentation almost immediately and after throwing off during the first few hours a large quantity of impurities continued to throw up through the bungs large quantities of very white froth. Much less viscous than with the other sorts. The S. was added on three different occasions to feed the formentation as required but on 28th at 9 p.m. 60lb each or 30 lbs 30lo Each and on 1st 15: The wine now 6th April still formenting very pale slightly sweet to the taste & very brisk promising to be very good.
