March 9th 8 a.m. fermentation subsiding, head absorbed sp grav. 1039º temp 88º
March 10th working slowly head absorbed 10327 temp 88º
March 11th at noon slight effervescence 1019º temp 84º racked off as follows vitz to No 1 cask of M. in cellar to fill up about 70 gals to No 3 cask in cellar to fill up about 120 to No 1 Ripe upstairs 112 Hogshead not full say 48 350 gals
