Riesling from New Vineyard nearly aliguite ripe about 90 gals Sp. grav. 1094º (with subsequent additions about 1116º

March 3rd commenced working (in pipe with head out) during night - at 8 p.m. added 40lbs fine pieces making gravity equal to about 1108º

March 4th working briskly at moderate temp.

March 5th same going on quite well temp 84º

March 6th 8 a.m. fermenting moderately added 18 lbs fine pieces total 58lbs 

March 7th working moderately

March 8th Do but subsiding - Sp grav 1025º - at 5 P.M. racked off into Hogshead & 1 greater cask

March 11th Ans effervesced at bung briskly eversince Sp grav 1011º

March 20th Nearly quite still. Sp grad both casks 994:70
