18th March commenced to work last night - worked strongly during the day changed water in which hose is put.

19th [March] Working but not so strongly at noon added LS. 182 through trap - temperature of contents being 92o At 9 P.M. sweetness per ap lible in wine drawn off from cock which was cool.

20th  [March] Still working but not so strongly wine drawn from cock cool & still sweetish. At 8 P.M. added LS, 122 temperature of vat being considerably reduced.

21 st[March] P.M. Sweetness apparently all gone feeling cool very strong vinous flavour.
