20th March

The most of this put into a pipe with some in a greater cask to fill up -

At night throwing out scum from the bung -

21st A.M. working strongly, abating towards night 
       9 P.M.   added LS.      108

22nd A.M. working well cask filled up in past
 "      P.M. more feeble

March 20th 

Grapes crushed late on the aftn - The must put into a Modern pipe for the night when it began to throw off scum - 21st in the morg the rape on skins received a gentle prepare under the screw then were riddled to separate them from the stalks & seeds - The skins were then put with the must now formenting briskly into two open casks & covered up with mats - At night working briskly 
8 P.M. added LS        120

22nd A.M. still working briskly very sweet
        2 P.M.         Do                      Do      but not so sweet
