This vat though so far from being full fermented with violence for 24 hours and the temperature rose as high as 96º. Afterwards the formentation gradually declined until the 9th when it was drawn off into 5 puncheons. Three of them being mixed with one third of [indecipherable] contents of the vineyard Muscat No 2 - The content of this vat very perceptibly sweet and continues work a little in the cask.

23rd The remaining two puncheons remaining too sweet wine this day mixed with 20 gals each of Muscat which appears to produce the desired result,
