These casks fermented strongly and the fermentation was prolonged - on 7th April very little sweetness perceptible.

7th April

Contents drawn off into nine puncheons and one small Hogshead; The vat being repeatedly stirred to mix the contents with the lees - The wine appears to be more sweet than the cask wine, next above -

23d Continues to be sweeter than desirable the fermenting being gravely nearly extinct - mixed with it Muscat wine in the proportion of 20 gals to two casks and 16 gals to 7 Casks - This appears to produce the desired results -
