DESCRIPTION
OF THE 
SACCHAROMETER.


THE Instrument is composed of brass; the Ball or Float being a circular Spindle, in the opposite ends of which are fixed a Stem and a Loop: the Stem bears a Scale of Divisions numbered downwards form the first to 30; these Divisions, which are laid down in an original manner, observe a diminishing progression according to true principles (a familiar description of which is attempted in the Introduction); therefore, each Division correctly indicates the one-thousandth part of the Specific Gravity of Water; and further, by the alteration made the BULK of the Saccharometer at every CHANGE of POISE, each of the same Divisions continues to indicate correctly the said one-thousandth part throughout--The distinguishing property of this Saccharometer, and which gives absolute perfection to its construction. 

There are usually five Poises, or Weights, engraved 970, 1000, 1030, &c; these Poises are of different sizes, each, comprising precisely such an augmentation of bulk, beyond the first, as the increase of its number indicates, viz. 30 Divisions of the Scale of the Stem; the Poise 1030 containing 30 Divisions more than the Poise 1000; 1060 containing 60 more, and so on; so that whatever Poise be used the Instrument, the sum of this number and the Division of the Scale which rests in the surface of the liquor under trial, indicates the Specific Gravity of such liquor: and the sum of these Divisions themselves (or the difference between 1000 and the Specific Gravity of Wort or Wash, as shown by this Saccharometer), denotes the strength of such Wort or Wash in terms of which, by the Act of the 4th Geo. IV. cap. 94, are called "Degrees of Gravity."

An ivory instrument accompanies the Saccharometer, which may be called a Pilot; its use being to determine, when floated in the liquor under trial, the Poise to be used with the Sacharometer in such liquor: thus, if the upper line or extremity of the Visions on the Stem of the Pilot, sink below
