An Account of the Root called Pee,ah and its use

Method of making it into a pudding

Pee,ah an herbaceous plant, it produces is a Root like a Potatoe,[sic] and like it varies in size according to the Age.  A sufficient number of those Roots are taken up, as the pudding is to be made large or small, and being pared of their thin rind, they are grated down by the help of a peice[sic] of corral or other grater.

It is now then put into a Vessel and covered with water, in the mean time a grater strainer is prepaired[sic] with their teeth they draw the stem of a plant called mow, into a number of fibres, & this constituting a strainer & the whole is collected into it from the water, & squeezed with the hands of all its juices, taking particular care that no part of the substance mixes with it.  They now let it lye It then remains in the water to settle, during which time some hot stones are got ready, & a half dozen of Old Cocoa Nutts[sic] are grated down in the same way as before the Peeah & the milk expressed out of them. The Peeah being settled the water is now poured quickly off, and their[sic] remains a thick milk white substance, which has the quality of a strong paste, & is used by them for that purpose in the manufactory of their cloth.     The Stones being now ready heated (two or three the size of a mans fist,) they are put into the Vessel where the paste is, & being rolled about for three or five or ten minutes & kept moistened with the cocoa nutt milk, to prevent the Ep peeah burning, the pudding will be fit for eating.  It will collect round the stones, but as they are turned round & kept in motion it is to be constantly scraped off, & by this means it forms into small lumps.    When the pudding is done it will have the appearance of oil or fat being mixed with it, but that is owing to the juice from the Old Cocoanutt[sic] having the last effect the fire can produce on it.  This is as tolerable good a pudding as possibly can be made. but Only hot stones will answer, for I have tryed[sic] it by frying , & in the oven, but it was not half so good.   I attempted to taste The Root before it w is dressed, but they said it was very bad, & from this is pernicious.  I consider it in some degree to have the property of casada.    

Method to keep peeah any length of time

After being washed & Cleaned scraped very clean, they are then grated down, as Potatoes are to make starch, by means of a Grater
