improved the quality of the grapes which were ungathered.  The white wine & muscat has been wholly fermented in [indecipherable] or puncheons about ½ full and racked off into the cellars below before the fermentation had ceased.  A gentle ebullition has thus in the earlier [indecipherable] wine continued until now 21st March and will probably continue some days longer.  All have worked down well and the temperature of the violent fermentation has only in one or two casks reached 92º or exceeded 90 and for the most part has at its maximum not gone above 86º to 88º.

In racking into three casks of 750 gall each and twelve of 400 gall.
