worked very gently all day having commenced each cask very strongly after being crushed & put to fermentation.
March 15th Worked up strongly in night at 8 a.m. thick rough head not rocky temp 92o. at 5 P.M. temp 94o - strong fermentation at 6 P.M. added 12 gals new B total 30
March 16th at noon fermentation subsiding, head nearly absorbed temp 94o still sweet
March 17th Nearly subsided gentle effervescence going on head absorbed Sp grav 1023 : 88. At 4 P.M. racked off into [indecipherable] No 4 large cask at grav of 1019o temp 86
March 18th working very gently at bung (not brisk enough)
March Monday 20th sp. grav 1012¼ : 76 working very gently - original grav equal to about 1150o has probably left to alternate about 25o & may work down -

March Monday 20th Sp. grav 1014½ : 74 working too gently has probably about 27o to left to alternate original grav being calculated at about 1150 with additives
