Dear Sir/ 

The best way to cut down Isinglass for fining wine is – take as much of fine Isinglass, as you will want for some time to comeSprinkle it well all over with acetic acid – let it lay all night – next morning cover the Isinglass with old wine if slightly acid so much the better – & if only so much old wine is used as will just cover the Isinglass it will form a thick Jelly – perfectly soluble in good wine, and when wanted for use it is only needed to whisk up as much as you think the condition
